comfort food...

being in school and coming home fairly late most days doesn't leave me much time to make real dinners lately. this weekend, however, i was able to try 2 new dishes and while they were both quite good, with minor changes to both, i would say they could be great.

the first one i made was an italian eggplant gnocchi bake. as i was cooking up the onions and eggplant, i was honestly hating the smell. i then realized that it was because of the white onion. i guess i've always cooked with sweet or yellow or spanish onions, never white. well turns out i despise white onions and ate around them when it was fully cooked. but! other than that, it was a really easy, good meal. dylan went back for 3 servings, so i think that's a good sign. i'll definitely make it again, but with a switch of the onion. we also decided to add breadcrumbs underneath the cheese.
cheesy goodness.

the second one i made was rachael ray's veg-head three-bean chili. it was my first time making any chili and i was nervous how it would compare to my dad's chili i have grown up with. not to mention the fact that i gave up meat again a few months ago and i had never had a vegetarian chili. that said, the recipe was easy peasy (as are most rachael ray ones) and comes together pretty fast. but i will say this, this recipe is spicy!! even dylan, who usually finds nothing spicy, was sweatin'. i'm not sure if it's coming from one of the spices or the jalapeno (even though it's fully seeded). again, it's good enough to be made a second time, but i'll be adjusting the spice levels and maybe even adding some corn to change it up a bit.


the taco chips and onions were a little bit of a saving grace, cutting the spice just a little.
