dessert dilemma...

so, first off-it's another crummy day out. it's drizzling, raining some, grey, wet. but that's ok, gives me time to cuddle on the couch with a blanket, chloe and a book. although i do have to pack and clean before i go to class tonight; my mom is going to be here when i get back from class to take me home for the weekend. moving on...
if you read yesterday, you know it was dylan's birthday. on friday, hopefully the weather will be decent, dylan is coming for dinner and my parents are going to have a bbq (he's there for dinner practically every time i'm home, so this isn't much different haha). my dilemma now is what to make for dessert. he suggested red velvet cupcakes. now, if you've been reading long enough, or if you should know one thing about me, it's that i.love.red.velvet;anything. cake, cupcakes, whoopie pies, ice cream, and whatever other form it may come in!! i'll eat it until i feel so sick and look 6 months pregnant. it's just that good.
i normally make paula deen's recipe, which is delicious. and the icing is to die for. but i thought, maybe there's a better recipe out there?

i thought about this, it's got cheesecake IN THE MIDDLE!?! ohmygod. (pictures and recipe here)
but then i figured, this is a big, and heavy cake. and let's face it; it's just my parents, dylan and i. this would be better saved for when more people are going to be eating it (and dylan-you eating half the cake yourself doesn't count! ha). but this is saved in my favorites, it will be made!!

this has kind of turned into a post about how much i love red velvet, but i swear, dylan loves it too, and he was the one that suggested it! :)
so my question-does anyone know of a red velvet recipe that you swear by? or something that you think is even better (probably not possible ha!) than red velvet!? share!

Okay, I have a confession...

I've never actually tasted red velvet cake.

*ducks quickly*

From what I can gather this is something or a crime and I should remedy it in short order, but the thing is it hasn't really reached the shores of Ireland just yet. So even if I make it.. how will I know I made it right and it tastes the way it's supposed to?

PS: I once dyed a cake red. Does that count?

If you can turn that cheesecake/red velvet into cupcakes, then you can easily share that amongst the handful of you! :)

Oh my gosh, cream cheese and melted marshmallows...that frosting sounds unbelievable!

Please make the cheesecake one soon and tell me how it is. I've now added both of these to my recipe file.

Ahhh! I saw that same cake the other day and nearly died. You can go to Cheescake Factory if you really want it {without all the trouble} - they have a similar slice there. xxSAS
